I don't actually use this website now, I got an email alert and reactivated my account.
I'm not really the one to ask about this but yes, I don't see why what you are suggesting shouldn't work. Just split the speed controller output between the three motors. I would suggest that you ask the question again on the open Forum as there may be someone who has actually done something like this and will be able to give more detailed advice on suitable capacity LiPos and a speed controller.
